Well I guess it’s no secret that eggs 🍳 seem to be my favorite breakfast/brunch food item. Funny thing is I use to hate them when I was younger. I would hide or refuse to eat them whenever my mom use to make them. How things have changed! 💁
Well I stumbled upon this cute little heart shaped cast iron skillet and immediately thought of baked eggs for the weekend (husband wants the cookie haha).
After washing the skillet, I greased it with avocado oil and threw in some chopped up red onions, green & red peppers and garlic (leaving a slight halo in the middle). I cracked a brown omega -3 egg into the middle and placed the skillet in the oven for 6 minutes (preheated to 350°).
As it was baking I chopped up spinach and shredded some jalapeño jack cheese.
I pulled out the skillet after the timer went off, at this point it was still slightly runny. I added black pepper and Himalayan pink salt and then topped one side with the spinach and cheese. I decided to add some of the Jaime Oliver chilli garlic pesto for a kick and placed it back in the oven for another 5 minutes to bake!
Turned out perfect! 👌 The yolk was still runny and the egg whites and veggies were nice and crisp! I used toasted gluten-free bread to scoop into it. 😍

Tried out a new recipe today. I was craving hot wings minus the meat since I’m trying not to eat poultry. I had seen this recipe online so I thought I’d try it out.
– 1 Cauliflower cut into bite size pieces
– Frank’s hot buffalo sauce
– Coconut oil
I preheated my oven to 400° but I think next time I’ll do 350° instead.
Lightly grease a baking sheet with coconut oil and place the cauliflower pieces sparingly.
Let them roast for 25 minutes.
In a mixing bowl add the hot sauce and salt & pepper.
Toss the cauliflower pieces in the sauce until coated well then transfer back to the baking sheet to roast another 10 minutes.
These didn’t last long, they smelled so good and tasted even better! 😋
With all the craziness that is going on with our neighbors to the south and the recent terrorist attack in Quebec I can’t help but feel saddened with the state of humanity. The world seems to be losing its empathy to fear.
Sometimes I wonder what exactly I can do to help people across the world being killed with airstrikes and poor living conditions. Just the thought of where to start is overwhelming.
I’m naturally a positive person but damn this shit gets to me!
So this weekend I found myself reaching for a book that I read a couple of years ago ‘The Four Agreements’. Going through it I realized there were some agreements I’ve been able to hold onto but had lost my grasp on the other half.
I decided change starts from home. I am going to focus on bettering myself so I can be a better person for my friends, family and colleagues. The thing about self care is that it’s contagious. Your vibes penetrate others bubbles creating a domino effect of either positivity or negativity.
So I am here to better myself with self awareness, community involvement, empathy and understanding. I hope this domino effect is something I can offer to the hurting people of this world ❤

Who’s been watching This is Us on NBC? This show without fail tugs at my heart strings each week. I can never figure out if I’m happy or sad or both by the time it ends. 😯
Is it weird that I don’t want Jack (the incredible dad) to die, even though we know he already has. Just the thought makes my heart cringe. 😢 I don’t think I’m ready for that episode anytime soon. Everytime he’s on screen I think of my sweet mother and it’s waterworks! 💦
I must say that this show is so well written with the flashback sequences mixed in with the ‘present’ day stories. The flow works so well.
Then ofcourse the actors!! Seriously what an amazing cast.
I’m so glad that there finally is a great family drama on TV. It’s so simple but so powerful.
I already can’t wait for next Tuesday! ❤ and it isn’t for tacos 😋
So on Friday at work our conversation was all about how amazing hollandaise sauce is! I can’t really remember how we got to hollandaise sauce but it got me craving eggs benny!
So this sunny Sunday morning I decided to make some at home. I realized I didn’t really have the traditional ingredients on hand to make one so I improvised…
The hubby made sunny-side up eggs and hash browns so I used the hash browns as my base.
Then layers on top were (starting from the bottom):
-Toasted mountain grain bread sliced at a diagonal
-drizzle of French’s honey mustard
– a slice of havarti cheese
-turkey bacon slice (halfed)
-over easy, brown omega-3 eggs
-sautéed onions and spinach
-topped with a slight crumble of goat cheese and pepper
Well our team lost today but our appies were a win 💁

So I suck at baking! I rarely bake anything and usually rely on my cousins for supplying me with the goods when needed.
Don’t get me wrong, I make attempts here and there but I always end up with a giant cookie or a gooey mess 💁
So one day I came across a gluten-free recipe that one of my vegan friends posted. It pretty much was solving my ‘what do I do with my extra ripe bananas’ dilemma at that moment. I tried it out and actually came out with delicious cookies! I made a few changes but this is the easiest non measuresy (totally made up that word) recipe…
Preheat oven to 350°
In a bowl mix:
-2 ripe bananas mashed
-1 cup oats
-Drizzle of vanilla extract
-Pinch of cinnamon
Mix all ingredients then add:
-unsweetened coconut flakes
-dark chocolate chips
Stir it all up and scoop onto greased baking sheet. I bake them for 15-18 minutes each.
This recipe makes a dozen yummy cookies.

I made chicken tacos tonight for my partner but since I am trying to go back to being a vegetarian I made myself some veggie tacos.
I tried out the Yves Veggie Cuisine Falafel Balls made out of chickpeas and they were delicious. I think next week I’ll try to make my own falafel balls just to cut down on the sodium.
I topped off my taco with chopped spinach, onions, avocado, salsa, siracha and goat cheese.
