Taco Tuesday Veggie Style

I made chicken tacos tonight for my partner but since I am trying to go back to being a vegetarian I made myself some veggie tacos.

I tried out the Yves Veggie Cuisine Falafel Balls made out of chickpeas and they were delicious. I think next week I’ll try to make my own falafel balls just to cut down on the sodium.

I topped off my taco with chopped spinach, onions, avocado, salsa, siracha and goat cheese.
